Lemon and Lime Puffed Rice Bars
These lemon and lime puffed rice bars are a light healthy snack, and the citrus zests bring out the light acidic notes in the coffee beautifully.
Ingredients
60g Brown rice cereal / puffed rice
45g Gluten free rolled oats
45g Golden raisins
80g Natural nut butter, almond
112g Glucose / brown rice syrup
20g Vegan whey powder
1 tsp Lemon zest
1 tsp Lime zest
¼ tsp Sea Salt
25g Coconut butter
Method
Step 1
Warm the glucose and coconut butter, then mix with the room temperature nut butter.
Step 2
Add the rest of the ingredients.
Step 3
Pack well into a lined tin, and leave to set for two hours minimum.
Step 4
Cut with a serrated knife.
